Spotlight Series – Tim Pearce

In 1987, Timothy Pearce began his culinary training in England. During the ’90s he apprenticed for three Michelin Starred Chefs and was working on staff when one British restaurant received the highest Michelin rating. On another exciting evening, he had the opportunity to cater to the Queen of England at Windsor Castle during the Cartier Polo Dinner. From England, Timothy traveled and cooked extensively through Australia, Southeast Asia, India, Laos and Bali. He joined the Hanley Center staff in 2009. Chef Timothy takes great pride in creating menus that are nutrient-dense and high in antioxidants and omega-3s to help assist individuals in recovery.

 

What brought you to Origins?

It was during the interview with Dr. Katz that I had the light bulb moment. The thought that we could make a difference in peoples’ lives through the choices of the food we serve was very powerful for me. So before even receiving the position, I began to reading up on food and recovery. Offering foods that are high in antioxidants and nutrient-dense while being low in sugar and salt is a great platform for clients to begin their journey of recovery. Using foods that are free of any pesticides and steroids, while avoiding those with any colors or words I can’t pronounce, helps to keep it all very fresh and clean.

 

If there were only one thing you could tell us about working within your client specialty area, what would it be?

Seeing the change in clients from when they first arrive and witnessing them becoming the people they used to be – from being cloudy and sluggish to focused and clear – is incredible.

 

What have you learned through your experience working in treatment?

Addiction can affect people from all walks of life; no one is immune.

What do you enjoy doing in your spare time? Do you have any pets or engage in special hobbies? 

I have been happily married to my wife Leslie for almost 10 years. We have an amazing son, Theo, who is 2 ½ years old. We also have two dogs: Blue, a rescued greyhound, and Ruua, an Irish setter. I enjoy golf, tennis and cycling, and I hope to one day complete a triathlon. I also enjoy photography and traveling.

 

Is there anything else you might like to share? 

I was just 13 years old when I first started working in kitchens, and I have worked in some of the best kitchens throughout the world. Since starting at the Hanley Center, I can truly say that I have never had a position as fulfilling as this.
